Honeybee HotelThe Waldorf Astoria’s Rooftop Garden and the Heart of New York City

Uncovering the honeyed history of the iconic Waldorf Astoria, Leslie Day explores the transformation of its rooftop garden from a place of leisure to an innovative beekeeping center, cultivated by executive chef David Garcelon. Introducing numerous honeybee hives to this landmark’s rooftop garden inspired a community to utilize the urban environment to provide meals, services, and educational opportunities for guests at the Waldorf Astoria and people living in the surrounding areas.
